Sheet Pan Chicken Sausage

Well hi there. Quite a bit has changed since I last documented a recipe. I am now the mom of two beautiful daughters, I am nearly done with my doctoral degree (g-d willing), and have started a private practice. I somehow have no time for the kitchen but always find myself there. I’m typically just there throwing away food that my kids didn’t eat.

When I first started Making Foods Fit, the title resonated as a fitness food blog. Fit foods but also every food should fit into a well balanced diet. Every food has a place. Now the name of my blog seems to take on new meaning. Quite literally I find myself making food fit into our busy lives. How do I as a mother of two make healthy-ish, easy and quick meals when I have a toddler hanging onto my pant leg and a kindergartener wanting me to watch her twirl for the hundredth time? In between school pickups, dissertation writing, bedtime routines and endless piles of dishes, I find myself looking for creative ways to cook.

I’ve met so many moms who experience the very same struggles. So in the midst of this all, I want to share some of the meals that work for us. My photos won’t be pretty but the recipes I share will be tasty.

So this next meal I quite literally prepared with my toddler dangling on my leg. There may have been tears. It took me less than 20 minutes to get into the oven. The photos show how I plated for my husband and I and for the girls.

The sausage and apples were a hit.



Ingredients:

  • 1 package of pre-cooked apple chicken sausage

  • 2 russet potatoes or sweet potato, cubed

  • 1 bunch asparagus, ends cut off

  • 1 cup cherry tomatoes, cut in half

  • 5oz feta

  • 2TSP garlic powder

  • salt and pepper to taste

  • Olive oil

Directions:

Preheat the oven to 375 degrees Fahrenheit.. Prepare a sheet pan with a drizzle of olive oil. In a large bowl, combine vegetables, spices and feta and enough olive oil to coat the vegetables. Mix in the sausage just to coat it with spices and oil. Place vegetables and sausage on the prepared sheet pan. Cook for 20-25 minutes or until the potatoes are soft and easily pierced by a fork. Mix the vegetables half way through.
